When Thanksgiving or Christmas is

done and you still have lots of turkey left,
you may wonder what you can do
with it all.

Actually, quite a lot.

First, chop, dice or shred your leftovers
and store them in resealable plastic bags
in the refrigerator.

That way, you can reach for a
bag or two as you need them.

Then you’ll be ready to try one

  3. Add 2 cups of chopped
  4. leftover turkey, a selection of
  5. chopped vegetables and 1 cup
  6. of uncooked rice or noodles to
  7. 3 cans fat-free, low sodium
  8. chicken broth.

  3. Add leftover turkey to a
  4. mix of arugula and spinach,
  5. sliced mushrooms, cranberries,
  6. shredded carrots, sliced red
  7. onions and a sprinkling of
  8. heart-healthy walnuts.
  9. Toss with your favorite low fat
  10. or fat free fruity dressing or
  11. vinaigrette.

  1. Sandwiches and Wraps

  2. Use slices of leftover turkey
  3. to make all kinds of sandwiches.
  4. Be sure to use whole grain
  5. breads and rolls,

  8. fat-free mayo, use mustard instead,
  9. or flavor your mayo with a little
  10. curry powder or another herb or
  11. spice.

  12. Make a turkey-salad filling
  13. with crunchy celery, cranberries

  17. Stuff into a whole wheat pita
  18. or spoon into the center of a

  4. or barbecue sauce,

  5. 1 cup of chopped turkey and
  6. 1/2 cup reduced fat cheese.

  8. at 450 degrees.

  1. Quesadillas

  2. Combine shredded turkey
  3. with a little cumin.
  4. Spoon on one half of a low
  5. fat corn tortilla;
  6. sprinkle with reduced fat cheese;
  7. fold tortilla in half and cook in
  8. a nonstick skillet
  9. (coated with cooking spray)
  10. for 5 minutes,
  11. turning once.

  2. Fajitas, and Tacos

  3. Add shredded turkey to salsa,
  4. black beans, low fat sour
  5. cream and reduced fat cheese;
  6. or combine with sautéed onions
  7. and sweet peppers;
  8. with shredded lettuce and
  9. chopped tomatoes;
  10. or mix with mild green chiles,
  11. seasonings, scallions and a
  12. can of enchilada sauce.
  13. Use low fat flour or
  14. corn wraps with these fillings.
  15. Pot pies Add leftover turkey,
  16. sliced mushrooms and leftover
  17. green beans and carrots to
  18. low fat, reduced sodium
  19. condensed chicken or
  20. mushroom soup.

  21. Top with a low fat biscuit topping
  22. (there’s now a low fat version
  23. of Bisquick) or phyllo pastry sheets.

  1. Casseroles

  2. Combine 2 cups chopped
  3. leftover turkey with 2 cups
  4. cooked whole grain rice,
  5. a can fat-free, low sodium
  6. broth or chopped tomatoes,
  7. and a selection of chopped
  8. vegetables in a 2-quart
  9. casserole.

  10. Cover and bake at 325 degrees
  11. for 30-40 minutes,
  12. until vegetables are tender.

  1. Skillet Meals

  2. Add 1 1/2 cups of chopped
  3. leftover turkey to sautéed onion,
  4. mushrooms, broccoli and rice
  5. cooked in fat-free broth.

  6. Sprinkle some parmesan
  7. before serving.
  8. Pasta dishes Add leftover turkey
  9. to your any number of pasta dishes.
  10. Use shredded turkey instead of
  11. ground beef in your favorite
  12. lasagna recipe.
  13. Be sure to use reduced fat cheeses.

Finally, don’t forget the carcass:

Put it in a big pot of water along
with some onion, carrots, celery,
peppercorns and herbs;

bring it to a boil, then simmer.

After a couple of hours,
you’ll have a rich stock, which
you can de-fat and use for low
fat soups, stews and gravies
throughout the holiday season.

Who knows,

once that turkey has finally gone,

bones and all,

you might even miss it…
