When Thanksgiving or Christmas is

done and you still have lots of turkey left,
you may wonder what you can do
with it all.
 
Actually, quite a lot.
 
First, chop, dice or shred your leftovers
and store them in resealable plastic bags
in the refrigerator.
 
That way, you can reach for a
bag or two as you need them.
 
Then you’ll be ready to try one

  3. Add 2 cups of chopped
  4. leftover turkey, a selection of
  5. chopped vegetables and 1 cup
  6. of uncooked rice or noodles to
  7. 3 cans fat-free, low sodium
  8. chicken broth.

  4. Add leftover turkey to a
  5. mix of arugula and spinach,
  6. sliced mushrooms, cranberries,
  7. shredded carrots, sliced red
  8. onions and a sprinkling of

  11. or fat free fruity dressing or
  12. vinaigrette.

  7. broth or chopped tomatoes,

Put it in a big pot of water along
with some onion, carrots, celery,
peppercorns and herbs;
 
bring it to a boil, then simmer.
 
After a couple of hours,
you’ll have a rich stock, which
you can de-fat and use for low
fat soups, stews and gravies
throughout the holiday season.  

Who knows,

once that turkey has finally gone,

bones and all,
